Fireweed Honey


One of our family favorites is fireweed honey. Not only are fireweed a pretty fall flower but it adds flavor to home made honey. Here is a recipe that we like. Easy to make and tastes very good. Enjoy.

60 white clover blooms
18-25 fireweed blooms
3/4 tsp alum
5 lb bag of white sugar
3 cups boiling water

Wash blooms in cold water to remove little critters. Put all ingredients except water in pan, then pour in boiling water.

Let sit for 10 minutes. Bring to boil and boil 10 minutes. Strain through cheesecloth or similar. Ladle into jars.

Allow to cool and enjoy...
